I'm considering doing the exhaust on my LS to let it breathe better but I'm just wondering if it's really worth it. Has anyone done theirs? How much did it cost and what gains did you get?

zetec20 when he had his car ran a catback exhaust - I didn't have too much problem keeping level with him through the National Park with a stock exhaust, although driving his car, it probably had slightly more top end. I guess if your going to do the exhaust, the headers will probably give you the most noticeable gains.
Xforce do a full kit of the Mazda 3 which another member has on his car... Otherwise there's always Cossie and other euro etc but you pay through the nose.

the daughter had cat back with stock intake, I had stock exhaust but removed second air box. kicked her behind but I probably hit it more agressively than she did!
had a bit of a run with a VE statesman the other day at the lights, kept up with him till 70 when I backed of!! he was looking!

If you want to go all out, I can't praise HiTech mufflers in darlinghurst. (which going by your 'location' aint to far from you)
